Summer Crockpot Ideas

My boyfriend is moving in at the end of the summer, which really means we live together now but he still has his own lease, which means feeding two each night and not as many lazy nights eating whatever I find. When we met, he ate the same thing every night: chicken breast sauteed, green peas, and boiled red potatoes. I've been trying, without ruining the healthiness of the meal, to put a creative spin on his every night chicken. This week, I've been loving the crockpot and figured it'd be useful for everyone planning weeknight meals for >1.

Taco-Seasoned Chicken
1 tbsp. Olive Oil
1 clove garlic
2 chicken breasts
1 cup chicken broth
2 tbsp. cumin
1 tsp. chili powder
1 tbsp. onion powder
1 tsp. oregano
crush red pepper
black pepper

Put the olive oil and garlic, pressed, in the bottom of the crock pot. Put the chicken breasts in and pour in the chicken broth. (If you pour in the chicken brother after seasoning the chicken, it will wash off all of the seasoning.) Add seasonings, to taste. Cook on low 7-8 hours. Shred with a fork and add chicken broth, if needed, until dinner.

You can make a great chicken taco salad with this by making a bowl of lettuce, tomato, onion, avocado, etc., and the chicken on top!

Smoky, Seasoned Chicken
Not sure exactly what to call this, but it's turned out great, twice!

1 tbsp. olive oil
1 clove garlic
2 chicken breasts
1 cup chicken broth
1 tsp. onion powder
1/2 tsp. marjoram
1 tsp. thyme
1 tsp. oregano
1 tsp. basil
1 tsp. smoked paprika
salt
pepper

OPTIONAL: baby carrots and frozen peas

Put the olive oil and garlic, pressed, in the bottom of the crock pot. Put the chicken breasts in and pour in the chicken broth. Add seasonings, to taste. Cook on low 7-8 hours OR high 4-5 hours.

You can also slice the chicken breast before putting it in the crock pot.
